SHAWS HAM & POTATO BAKES
INGREDIENTS:
- 4 slices of Shaws Deli Counter Ham, thickly cut and diced
- 6 medium sized baking potatoes
- 130ml double cream
- 130g Mitchelstown Cheedar cheese, grated
- 4 tsp Wholegrain mustard
- 3 spring onions, finely chopped
- Salt and black pepper to taste
PREPARATION:
Place the potatoes in a preheated oven (220oC/425oF/Gas 7) for 15-20 mins. Carefully cut in half and scoop out the potato and place n a bowl. Add the Shaws Deli Counter Ham, spring onions, mustard and some cheese to the potato. In a saucepan, gently warm the cream. Add to the potato mixture, season to taste. Fill the potato skins with the mix and return them to the oven. Sprinkle the remaining cheese over the top and bake for 3-5 mins until the cheese has melted.
